    Prep oysters

    If oysters are not already shucked, carefully shuck them and transfer each oyster to its half shell. Place shucked oysters on a baking sheet or platter over a bed of ice to keep them steady and cold while you prepare toppings.

    Preheat the broiler: position an oven rack 4–6 inches (10–15 cm) from the broiler element and preheat the broiler to high for at least 5 minutes so it’s very hot.

Chili butter

    Make chili butter

    In a small saucepan over low heat (or in a microwave-safe bowl in 10–15 second bursts), melt the unsalted butter gently. Stir in the minced garlic, red chili flakes, smoked paprika, lemon juice, soy sauce, salt, and black pepper until combined. Cook over low heat for 30–45 seconds to bloom the spices and soften the garlic, then remove from heat. Taste and adjust salt or chili to preference. Keep warm.

Breadcrumb topping

    Prepare topping

    In a small bowl combine the fresh breadcrumbs, grated Parmesan, chopped parsley, lemon zest, olive oil, salt, and pepper. Mix until the breadcrumbs are evenly moistened and hold together lightly when squeezed. If mixture seems dry, add another 1/4 tsp olive oil or a few drops of chili butter.

    Toast breadcrumbs (optional for extra crunch): heat a small skillet over medium heat, add the breadcrumb mixture and toast, stirring, for 2–3 minutes until golden and fragrant. Remove from heat and let cool slightly.

Assemble & Broil

    Assemble oysters

    Arrange the shucked oysters on a rimmed baking sheet or on a broiler-safe platter set on a bed of rock salt or ice if you plan to serve immediately. Spoon about 1/2 tsp of the warm chili butter over each oyster (adjust to taste), then mound roughly 1 tsp of the breadcrumb topping on each oyster, pressing lightly so it adheres.

    Broil

    Place the oysters under the preheated broiler 4–6 inches from the heat source. Broil for 2–4 minutes, watching closely: the topping should be golden brown and the butter bubbling. Total broil time will depend on your broiler strength; do not walk away.

    Remove from oven with care. Let oysters rest for 30 seconds to 1 minute — the butter will be very hot.

Finish & Serve

    Garnish and serve

    Transfer oysters to a warmed serving plate (keep on ice if desired for presentation). Garnish each oyster with a small sprinkle of chopped parsley or microgreens and a tiny squeeze of lemon just before serving. Serve immediately with lemon wedges alongside.
