Cooking Instructions
- 1
Prepare the Clams
In a large bowl, soak the manila clams in cold water for about 30 minutes to remove any sand. Rinse them thoroughly and set aside.
- 2
Cook the Spaghetti
In a large pot of boiling salted water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.
- 3
Sauté the Garlic and Chili
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red chili flakes, sautéing until fragrant, about 1 minute.
- 4
Add Clams and Wine
Add the clams to the skillet, then pour in the white wine. Cover and cook for about 5-7 minutes, or until the clams open up. Discard any that do not open.
- 5
Combine with Spaghetti
Add the cooked spaghetti to the skillet with the clams. Toss everything together, adding reserved pasta water a little at a time until the desired consistency is reached.
- 6
Finish with Herbs and Lemon
Remove from heat and stir in the chopped parsley and lemon juice. Season with salt and black pepper to taste.
