Chicken Preparation

    Prepare the Chicken

    Preheat the oven to 400°F (200°C). Season the chicken supremes with salt and pepper. In a bowl, mix panko breadcrumbs, chopped rosemary, and grated Parmesan cheese. Dip each chicken supreme in olive oil, then coat with the panko mixture.

    Roast the Chicken

    Place the coated chicken on a baking sheet and drizzle with a little more olive oil. Roast in the preheated oven for 25-30 minutes until golden brown and cooked through.

    Cook the Spaghetti

    In a large pot of salted boiling water, cook the fresh spaghetti according to package instructions until al dente. Drain and set aside.

    Make the Pomodoro Sauce

    In a pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add crushed tomatoes and basil, season with salt, and simmer for about 15 minutes. Toss the cooked spaghetti in the sauce.

    In a bowl, combine baby arugula and diced heirloom tomatoes. Drizzle with lemon juice and olive oil, season with salt and pepper, and toss gently.

    Plate the Dish

    On each plate, serve a portion of the spaghetti topped with the pomodoro sauce, a piece of roasted chicken, and a ball of burrata. Add a side of arugula salad.
