Preparation of Pickled Chili

1. Pickle the Chilies

Combine white vinegar, sugar, and salt in a small saucepan over medium heat. Stir until sugar and salt dissolve. Pour over the whole chili peppers in a jar and let sit for at least 30 minutes.

2. Make Salsa Verde

In a food processor, combine parsley, basil, capers, garlic, olive oil, red wine vinegar, salt, and black pepper. Blend until smooth and adjust seasoning as needed.

Cooking the Vegetables

3. Grill the Asparagus and Broccolini

Preheat the grill to medium-high heat. Toss the asparagus and broccolini with olive oil, salt, and pepper. Grill for 4-5 minutes until tender and slightly charred.

Making Crispy Garlic

Thinly slice the garlic cloves. Heat olive oil in a small skillet over medium heat. Add the garlic and fry until golden brown. Remove and drain on paper towels.
