    Preheat your oven to 375°F (190°C).

    Whisk the Eggs

    In a large mixing bowl, whisk together the eggs, salt, and black pepper until well combined.

    Add Cheese and Herbs

    Stir in the grated Parmesan cheese, fresh arugula, and chopped herbs into the egg mixture.

    Cook the Potatoes

    In a large oven-safe skillet, heat olive oil over medium heat. Add the diced crispy potatoes and sauté for about 5 minutes until they are slightly golden.

    Pour the egg mixture over the crispy potatoes in the skillet. Stir gently to combine. Cook for about 3-5 minutes until the edges start to set.
