Prepare the Oven
Preheat your oven to 375°F (190°C).

Whisk the Eggs
In a large mixing bowl, whisk together the eggs, salt, and black pepper until well combined.

Add Cheese and Herbs
Stir in the grated Parmesan cheese, fresh arugula, and chopped herbs into the egg mixture.

Cook the Potatoes
In a large oven-safe skillet, heat olive oil over medium heat. Add the diced crispy potatoes and sauté for about 5 minutes until they are slightly golden.

Bake the Frittata
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly browned on top.
