Method

Making the Cannoli Shells

    Prepare the Dough

    In a mixing bowl, combine flour, sugar, salt, and butter. Mix until crumbly, then add the egg and wine (or vinegar). Knead until smooth, wrap in plastic wrap, and let rest for 30 minutes.

    Roll and Cut

    Roll out the dough as thin as possible using a pasta machine or rolling pin. Cut into circles of about 4 inches in diameter.

    Fry the Shells

    Heat the vegetable oil in a deep fryer or heavy pot to 350°F (175°C). Wrap each dough circle around a cannoli tube, sealing the edges with a bit of water. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

Making the Filling

    Combine Ingredients

    In a medium bowl, mix together the ricotta, powdered sugar, vanilla extract, chocolate chips, and candied orange peel until well combined.

    Fill the Shells

    Once the shells have cooled, pipe the filling into each end of the cannoli shells using a pastry bag or a zip-top bag with the corner snipped off.

Serving
