Method

Preparation

  1. 1

    Make the Miso Vinaigrette

In a small bowl, whisk together the white miso paste, rice vinegar, sesame oil, honey, and water until well combined. Set aside.

  2. 2

    Prepare Ahi Tuna

Pat the Ahi tuna steaks dry with paper towels. Season both sides with salt and black pepper. Heat olive oil in a skillet over medium-high heat and sear the tuna for 1-2 minutes on each side until cooked to your desired doneness. Remove from heat and let it rest.

  3. 3

    Prepare Crispy Wontons

Heat oil in a deep pan for frying. Cut wonton wrappers diagonally to form triangles. Fry in hot oil until golden brown and crispy, about 1-2 minutes. Remove and drain on paper towels.

Assembly

  1. 4

    Assemble the Dish

Slice the avocado and tomato. On a serving plate, place the seared Ahi tuna, drizzled with miso vinaigrette. Top with avocado slices, diced tomato, a dollop of wasabi mayo, and a sprinkle of tobiko. Serve with crispy wontons on the side.
