For the Affogato

For the Gluten-Free Almond & Chocolate Biscotti

Method

Preparing the Biscotti

  1. 1

    Mix Dry Ingredients

Preheat your oven to 350°F (175°C). In a bowl, mix together almond flour, cocoa powder, baking powder, and salt.

  2. 2

    Combine Wet Ingredients

In a separate bowl, whisk the sugar, eggs, and vanilla extract until combined. Gradually add the dry ingredients to the wet mixture.

  3. 3

    Add Nuts and Chocolate

Fold in the sliced almonds and dark chocolate chips until evenly distributed.

  4. 4

    Form the Dough

Shape the dough into a log about 12 inches long and 4 inches wide on a parchment-lined baking sheet.

  5. 5

    Bake the Log

Bake in the preheated oven for about 25-30 minutes or until firm. Let it cool for about 10 minutes.

  6. 6

    Slice and Bake Again

Slice the log into 1-inch thick pieces and lay them flat on the baking sheet. Bake for an additional 10-15 minutes on each side until crisp.

Assembling the Affogato

  1. 7

    Serve the Affogato

In a serving glass or bowl, add 1 cup of vanilla gelato. Pour hot espresso or strong coffee over the gelato just before serving. Serve with a side of biscotti.
