Prepare the Crabs
Rinse the softshell crabs under cold water and pat them dry with paper towels. Remove the gills and any remaining debris from the crabs.

Set Up Breading Station
In one shallow bowl, combine the flour, cornmeal, salt, black pepper, and garlic powder. In another bowl, whisk together the eggs and milk until well combined.

Bread the Crabs
Dredge each crab first in the flour mixture, then dip into the egg mixture, and finally coat with more flour mixture until fully covered.

Heat Oil
In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

Fry the Crabs
Carefully add the breaded crabs to the hot oil and fry for about 4-5 minutes on each side, or until golden brown and crispy.

Drain and Serve
Remove the crabs from the skillet and place them on a paper towel-lined plate to drain excess oil. Serve hot with lemon wedges and garnish with fresh parsley.
