Tomato Brandy Cream Sauce
Method
Preparing the Steak
- 1
Season the Steak
Rub the ribeye steak with salt and black pepper on both sides.
- 2
Sear the Steak
In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned steak and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness.
- 3
Rest the Steak
Remove the steak from the skillet and let it rest on a cutting board for at least 5 minutes before slicing.
Making the Tomato Brandy Cream Sauce
- 4
- 5
Add Tomatoes
Stir in the diced tomatoes, salt, and black pepper. Cook for another 5-7 minutes until the tomatoes have softened.
- 6
Incorporate Brandy and Cream
Carefully add the brandy to the skillet, scraping any brown bits off the bottom. Allow it to cook for 1-2 minutes, then stir in the heavy cream. Simmer for another 3-4 minutes until the sauce thickens slightly.
- 7
Finish with Basil
Remove the skillet from heat and stir in the chopped fresh basil. Adjust seasoning if necessary.
