Cook Quinoa

In a medium saucepan, bring 2 cups of water to a boil. Add 1 cup of quinoa, reduce heat to low, cover, and simmer for about 15 minutes or until quinoa is fluffy and water is absorbed. Remove from heat and let it cool.

Preheat your oven to 400°F (200°C). In a bowl, toss diced apples with 2 tablespoons of olive oil, cinnamon, salt, and pepper. Spread the apples on a baking sheet and roast for 20 minutes or until tender and slightly caramelized.
