Method
Preparation
- 1
Preheat the Oven
Preheat your oven to 450°F (232°C).
- 2
Season the Prime Rib
In a small bowl, combine kosher salt, black pepper, garlic powder, and chopped fresh rosemary. Rub the prime rib roast with olive oil, then generously coat it with the seasoning mixture on all sides.
Roasting
- 3
Initial High-Temperature Roast
Place the seasoned prime rib roast in a roasting pan, bone side down. Roast in the preheated oven for 20 minutes at 450°F (232°C).
- 4
Reduce Temperature and Continue Roasting
After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting for approximately 1 hour to 1 hour and 15 minutes, or until a meat thermometer inserted into the center of the roast reads 130°F (54°C) for medium-rare.
Resting
- 5
Rest the Meat
Once the desired internal temperature is reached, remove the prime rib from the oven and cover it loosely with aluminum foil. Let it rest for 15 to 20 minutes before slicing. This allows the juices to redistribute.
Serving
- 6
Slice and Serve
Slice the prime rib against the grain and serve with optional melted butter and fresh thyme on top for added flavor.
