Preparation

    Prepare the Steak

    Take the New York strip steaks out of the refrigerator and let them sit at room temperature for 30-60 minutes before cooking. This helps them cook evenly.

    Season the Steak

    Rub both sides of each steak with olive oil, followed by salt, black pepper, and garlic powder. Ensure the steaks are well-coated with the seasoning.

Cooking

    Preheat the Grill or Skillet

    Preheat your grill or a heavy skillet (preferably cast iron) over medium-high heat for about 5-10 minutes until hot.

    Cook the Steak

    Place the seasoned steaks on the grill or skillet. Cook for 4-5 minutes on one side without moving them to achieve a nice sear.

    Flip the Steak

    Flip the steaks using tongs. Add the fresh rosemary sprigs and butter to the skillet. Cook for another 4-5 minutes for medium-rare, or longer to achieve your desired doneness.

    As the steak cooks on the second side, use a spoon to baste the melting butter and rosemary over the top of the steaks for added flavor.

Resting

    Rest the Steak

    Remove the steaks from the heat, place them on a cutting board, and tent them loosely with foil. Let them rest for 5-10 minutes. This allows the juices to redistribute, resulting in a juicier steak.
