Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (400°F).

  2. 2

    Prepare the Lamb

Trim excess fat from the lamb and pat it dry with paper towels.

Herb Crust Mixture

  1. 3

    Mix the Herb Crust

In a bowl, combine the chopped rosemary, thyme, minced garlic, Dijon mustard, breadcrumbs, olive oil, salt, and black pepper. Mix until fully combined.

Coating and Roasting

  1. 4

    Coat the Lamb

Spread the herb crust mixture evenly over the top of the lamb, pressing it down gently to adhere.

  2. 5

    Roast the Lamb

Place the lamb on a roasting rack in a baking dish. Roast in the preheated oven for about 25-30 minutes for medium-rare, or until the internal temperature reaches 60°C (140°F).

Resting and Serving

  1. 6

    Let it Rest

Once done, remove the lamb from the oven and let it rest for 10 minutes to allow the juices to redistribute.

  2. 7

    Garnish and Serve

Garnish with fresh rosemary sprigs and serve with lemon wedges on the side.
