Trim excess fat from the lamb and pat it dry with paper towels.

In a bowl, combine the chopped rosemary, thyme, minced garlic, Dijon mustard, breadcrumbs, olive oil, salt, and black pepper. Mix until fully combined.

Spread the herb crust mixture evenly over the top of the lamb, pressing it down gently to adhere.

Place the lamb on a roasting rack in a baking dish. Roast in the preheated oven for about 25-30 minutes for medium-rare, or until the internal temperature reaches 60°C (140°F).
