Prepare the Filet Mignon
Remove the filet mignon steaks from the refrigerator and let them sit at room temperature for 30 minutes. This will help them cook evenly.

Season the Steaks
Pat the steaks dry with paper towels. Rub both sides with olive oil, then season generously with salt and black pepper. Sprinkle fresh rosemary on both sides.

Rest the Steaks
Remove the steaks from the skillet and let them rest on a plate for 5 minutes before serving.

Add Butter and Cream
Add 4 tbs of butter and 1 cup of heavy cream to the mashed potatoes. Mix well until creamy.

Season to Taste
Add salt and black pepper to the mashed potatoes to taste, mixing until fully incorporated.
