    Season the Steaks

    Pat the Delmonico steaks dry with paper towels. Season both sides generously with kosher salt and black pepper.

    In a large skillet or cast iron pan, heat the olive oil over medium-high heat until shimmering.

    Sear the Steaks

    Carefully place the seasoned steaks in the hot pan. Sear for 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

    Make the Garlic Herb Butter

    While the steaks are cooking, melt the unsalted butter in a small saucepan over low heat. Add minced garlic, parsley, thyme, and a pinch of salt. Stir to combine and let the mixture simmer for about 2-3 minutes until fragrant.

    Baste the Steaks

    During the last minute of cooking the steaks, spoon the garlic herb butter over them to baste and add flavor.

    Prepare Asparagus

    While the steaks are resting, prepare the asparagus by trimming the tough ends. Toss with olive oil, salt, and juice from half the lemon.

    In the same skillet used for the steaks, add the asparagus and cook for 5-7 minutes over medium heat until tender. Squeeze the remaining lemon juice over the asparagus before serving.

Serving

    Let the steaks rest for 5 minutes after cooking. Slice against the grain and serve with the garlic herb butter drizzled on top. Accompany with the sautéed asparagus if desired.
