Jalapeño Orange Glaze

Method

Preparation of Calamari

    Prepare the Calamari

    Rinse the calamari rings under cold water and pat them dry with paper towels.

    Mix Dry Ingredients

    In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, and cayenne pepper. Mix well.

    Prepare Wet Ingredients

    In another bowl, whisk together the egg and milk until well combined.

    Dredge the Calamari

    Dip each calamari ring first into the wet mixture, then dredge in the flour mixture until fully coated.

Frying the Calamari

    Heat the Oil

    In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Calamari

    Carefully add the battered calamari in batches, frying for about 2-3 minutes or until golden brown and crispy.

    Drain the Calamari

    Remove the fried calamari from the oil and place them on a paper towel-lined plate to drain excess oil.

Preparation of Jalapeño Orange Glaze

    Combine Ingredients

    In a small saucepan, combine fresh orange juice, chopped jalapeño, brown sugar, soy sauce, rice vinegar, sesame oil, cornstarch, and water.

    Cook the Glaze

    Bring the mixture to a boil over medium heat, stirring constantly until the sauce thickens, about 3-5 minutes.

Final Assembly

    Toss Calamari in Glaze

    In a large bowl, toss the fried calamari with the jalapeño orange glaze until well coated.

    Transfer the glazed calamari to a serving platter and serve immediately.
