Prepare the Fries

Cut and Soak the Potatoes
Wash and peel the Russet potatoes, then cut them into fries. Soak the fries in cold water for at least 30 minutes to remove excess starch.

Fry the Potatoes
Heat the vegetable oil in a deep fryer or large pot to 350°F (175°C). Drain and pat dry the soaked fries, then carefully add them to the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.
Prepare the Crab Topping

Mix the Topping
In a bowl, combine the fresh crab meat, mayonnaise, lemon juice, Old Bay seasoning, and chopped green onions. Mix gently until well combined.
Assemble and Serve

Serve the Crab Fries
Place the fries on a serving platter, generously top with the crab mixture, and garnish with chopped parsley. Serve with lemon wedges on the side.
