A concoction to warm the heart during the deep winter. Semi-sweet chocolate, candied walnuts, cinnamon and sugar, wrapped in flakey puff pastry and served with whipped cream and chocolate drizzle.

Make candied walnuts (if using raw walnuts)

Place a small nonstick skillet over medium heat. Add 3 tbsp granulated sugar and 1 tbsp water; stir until sugar dissolves and begins to simmer. Add 1 cup raw walnut halves and a pinch (1/4 tsp) salt. Continue stirring frequently, coating walnuts until the syrup crystallizes and then melts to glaze the nuts, 4–6 minutes. Transfer walnuts to a sheet of parchment to cool and separate. Chop coarsely once cool. If you start with pre-candied walnuts, skip this step.

Pastry & assembly

Prepare puff pastry

Remove puff pastry sheets from the refrigerator and let them rest at room temperature for 15–20 minutes so they are pliable but still cold. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper. Lightly flour a work surface with 2 tsp all-purpose flour. Unfold one sheet and, if needed, roll lightly to even thickness (do not overwork).

Cut and portion

Cut each sheet into 4 equal rectangles to yield eight portions total (about 3.5 x 5 inches each). Keep the cut pieces chilled on the parchment-lined baking sheet in the refrigerator if you need extra time.

Prepare filling

Chop or break the 200 g semi-sweet chocolate into chunks if using bars. In a small bowl combine 1 cup candied walnuts (chopped), 2 tbsp granulated sugar (for filling), and 1 tsp ground cinnamon; toss to combine. Set chocolate and nut mixture ready at the work surface.

Assemble pastries

Whisk the egg with 1 tsp cold water to make an egg wash. Brush a thin layer of melted butter (about 1/2 tbsp per piece) on the perimeter of each pastry rectangle. Place roughly 1.5–2 tbsp chocolate chunks in the center of each rectangle, then top with about 2 tbsp of the candied walnut mixture. Fold each rectangle into a neat parcel: you can fold long edge over to make a pocket or fold diagonally to make a triangle, sealing edges by pressing with a fork. Ensure seams are well sealed to keep chocolate contained. Transfer assembled parcels to the prepared baking sheet, leaving space between them.

Egg wash and chill

Brush each parcel with the egg wash, which will give a golden sheen. Chill the assembled pastries in the refrigerator for 10 minutes to firm the butter and help puffing.

Bake

Bake in the preheated 400°F (200°C) oven for 18–22 minutes, until the pastries are puffed and deep golden brown on top. Rotate the tray halfway through baking for even color. Remove from oven and transfer to a wire rack to cool slightly (5 minutes).

Whipped cream & chocolate drizzle

Make whipped cream

While pastries bake, chill a medium bowl and whisk (or beaters) if possible. Pour 1 cup chilled heavy cream into the bowl, add 2 tbsp powdered sugar and 1/2 tsp vanilla extract. Whip by hand or with a mixer on medium-high until soft peaks form, about 2–3 minutes. Hold in the refrigerator until ready to serve.

Prepare chocolate drizzle

Melt 50 g dark/semi-sweet chocolate in a heatproof bowl set over a simmering pot of water (double boiler) or in 20–30 second bursts in the microwave, stirring between bursts until smooth. If needed, stir in up to 1 tsp neutral oil to loosen the texture for a smooth drizzle. Transfer melted chocolate to a small squeeze bottle or use a spoon for drizzling.

Finishing & serving

Place one warm Waldbrotchen on each plate. Dust lightly with 1 tbsp powdered sugar and a tiny pinch (1/8 tsp) fine sea salt over the pastries to enhance the flavors. Spoon or pipe a generous dollop (about 2–3 tbsp) of whipped cream alongside each pastry. Drizzle melted chocolate over the pastry and cream in a decorative pattern. Serve warm so the chocolate inside is melty and the puff pastry is flaky.

Storage: leftovers can be kept in an airtight container in the refrigerator for up to 2 days. Reheat in a 350°F (175°C) oven for 6–8 minutes to crisp the pastry and warm the filling; avoid microwave reheating which will make the pastry soggy.
