Tea
Heat water
Bring fresh water to a gentle boil, then remove from heat. Let water sit 30–60 seconds to cool slightly to around 95°C (203°F). Using water that is not aggressively boiling preserves delicate chamomile aromatics.
Steep
Pour 8 oz hot water over the chamomile. Cover the teapot or cup to retain heat and essential oils. Steep for 5–7 minutes for a balanced, soothing cup; steep up to 10 minutes for a stronger, more floral infusion. Avoid over-steeping beyond 10–12 minutes to prevent bitterness.
Strain and serve
Remove the infuser or strain the tea into a cup to remove flowers. Taste and adjust strength by steep time next brew if necessary.
Optional additions
Sweeten
If desired, stir in 1 tsp honey while the tea is hot so it dissolves fully. Adjust to taste.
Brighten
Add 1 tsp fresh lemon juice to brighten the flavor. Add gradually and taste—lemon will change the tea’s profile but pairs nicely with honey.
Mint
Bruise 2 fresh mint leaves gently with your fingers to release oils and drop them into the cup before or after steeping for a cooling herbal note.
