Heat water

Pour 12 fl oz (about 350–360 ml) of fresh cold water into a kettle and bring to a gentle boil. Once boiling, remove from heat and allow to cool for about 30 seconds to reach approximately 95°C (203°F) — optimal for black tea.

Steep tea

Place 2 teaspoons of loose-leaf Earl Grey (or one standard tea bag) into a teapot or mug. Pour the hot water directly over the tea leaves. Cover or place a saucer over the mug to retain heat and steep for 3–4 minutes. Steep 3 minutes for a lighter cup, 4 minutes for fuller strength and more bergamot aroma. Do not steep longer than 5 minutes to avoid excessive bitterness.

Strain and serve

If using loose leaf, strain the tea into a cup using a fine mesh strainer. If using a tea bag, remove and gently press out excess liquid against the cup with a spoon (optional). Taste and proceed with optional additions if desired.

Add milk

If you like milk with your Earl Grey, add about 2 tablespoons of warmed milk to the cup and stir gently. Adding milk will soften tannins and create a creamier mouthfeel.

Sweeten

If you prefer a sweeter tea, stir in 1 teaspoon of honey or sugar until dissolved. Adjust to taste.

Citrus option

If you prefer lemon, omit milk (milk can curdle with lemon). Add one fresh lemon slice or a teaspoon of fresh lemon juice to brighten the bergamot aroma.
