Shake Ingredients
In a cocktail shaker, combine the Sheringham whisky, lemon juice, simple syrup, and egg white. Dry shake (without ice) vigorously for about 15 seconds to emulsify the egg white.
Add Ice
Add ice to the shaker and shake again for another 15-20 seconds until well chilled.
Strain
Strain the mixture into a chilled coupe or cocktail glass.
Layer Red Wine
Slowly pour the red wine over the back of a spoon so that it floats on top of the cocktail.
Garnish and Serve
Optionally, garnish with a lemon twist or a cherry. Serve immediately and enjoy!
