Prepare Sloe Berries

Wash the sloe berries thoroughly and remove any stems or leaves. Pat them dry with a clean cloth.

Combine Ingredients

In a large sterilized jar, layer the sloe berries and granulated sugar. Pour the London dry gin over the top, ensuring the berries are fully submerged.

Infuse

Seal the jar tightly and store it in a cool, dark place. Shake the jar gently every few days to help dissolve the sugar and mix the ingredients.

Wait

Allow the mixture to infuse for at least 3 months, but preferably 6 months for the best flavor.

Strain and Bottle

After the infusion period, strain the liquid through a fine mesh sieve or cheesecloth into a clean bottle, discarding the solids. If desired, add the water to adjust the sweetness and alcohol content.

Serve

The sloe gin is now ready to be enjoyed. Serve it over ice, with tonic water, or use as a cocktail ingredient.
