Prepare the Black-Eyed Peas
If using dried black-eyed peas, soak them overnight and then boil them in salted water until tender. If using canned, rinse and drain them.

Sauté the Broccolini
In a pan, heat 1 tablespoon of olive oil over medium heat. Add the broccolini and sauté for about 5-7 minutes until tender. Season with salt and pepper. Set aside.

Cook the Scallops
In the same pan, add another tablespoon of olive oil. Season the scallops with salt and pepper. Sear them for 2-3 minutes on each side until golden brown and cooked through. Remove from the pan and set aside.

Make the Country Ham Vinaigrette
In a small bowl, whisk together the remaining olive oil, vinegar, and chopped country ham. Adjust seasoning with salt and pepper.

Plate the Dish
On a plate, arrange the black-eyed peas, top with scallops, sautéed broccolini, and drizzle with the country ham vinaigrette. Finish with a sprinkle of cornbread crumbs on top.
