Prepare the Ingredients

Chop the onion, green bell pepper, celery, and garlic. Slice the andouille sausage and cut the chicken into bite-sized pieces.

Sauté the Vegetables

In a large pot, heat the olive oil over medium heat. Add the onion, green bell pepper, and celery. Sauté for about 5 minutes or until they start to soften.

Cook the Sausage and Chicken

Add the sliced andouille sausage and chicken pieces to the pot. Cook until the chicken is browned, about 5-7 minutes.

Add Garlic and Seasonings

Stir in the minced garlic, Cajun seasoning, bay leaves, salt, and black pepper. Cook for an additional 2 minutes.

Add Tomatoes and Broth

Pour in the diced tomatoes and chicken broth. Bring the mixture to a boil.

Simmer the Gumbo

Once boiling, reduce the heat to low and let it simmer for 30 minutes, stirring occasionally.

Cook the Rice

While the gumbo is simmering, cook the Carolina Gold rice according to package instructions.

Serve

Remove bay leaves from the gumbo. Serve the gumbo over a scoop of rice and garnish with chopped green onions and parsley.
