    Prepare the Collard Greens

    Wash the collard greens thoroughly under running water to remove any dirt or grit. Remove the stems and roughly chop the leaves.

    Sauté Aromatics

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, about 5 minutes. Add the minced garlic and red pepper flakes, cooking for an additional minute until fragrant.

    Cook the Smoked Turkey

    Add the smoked turkey leg to the pot, followed by the chicken broth. Bring to a boil, then reduce the heat to low. Let it simmer for about 20 minutes to infuse the flavors.

    Add Collard Greens

    Add the chopped collard greens to the pot, stirring to combine. Season with salt and black pepper to taste. Cover and let simmer for another 30-40 minutes, until the greens are tender.

    Serve

    Remove the smoked turkey leg, shred the meat, and return it to the pot. Stir to combine and serve hot, ensuring to ladle some of the 'pot likker' (the flavorful broth) over the greens.
