Instructions

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.

  2. 2

    Mix Wet Ingredients

In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and 7Up soda.

  3. 3

    Combine Dry Ingredients

In a separate bowl, whisk together the flour and baking powder.

  4. 4

    Combine Mixtures

Gradually add the dry ingredients to the wet mixture, mixing until just combined. Fold in the blueberries gently.

  5. 5

    Bake the Cake

Pour the batter into the prepared baking pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  6. 6

    Prepare the Almond Streusel

While the cake is baking, prepare the almond streusel by mixing together 0.5 cups of all-purpose flour, 0.5 cups of brown sugar, 0.25 cups of slivered almonds, and 0.25 cups of melted butter until crumbly.

  7. 7

    Add Streusel Topping

Once the cake is baked, remove it from the oven and sprinkle the almond streusel on top. Return to the oven for an additional 10 minutes.

  8. 8

    Cool and Serve

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack. Serve warm with a dollop of crème fraîche.
