Wine Ingredients
Method
Wine Preparation
- 1
Harvesting the Grapes
Begin by carefully harvesting Chardonnay and Grechetto grapes, ensuring they are ripe and ready for fermentation.
- 2
Crushing the Grapes
Crush the harvested grapes to release their juices. This can be done using a grape crusher or manually.
- 3
Adding Yeast
Once the grape juice is extracted, add 5 grams of wine yeast to the juice to initiate fermentation.
- 4
Fermentation Process
Allow the mixture to ferment in a controlled environment for approximately 2-3 weeks at a temperature of around 15-20°C, stirring occasionally.
- 5
Add Sulfur Dioxide
After fermentation, add 50 grams of sulfur dioxide to stabilize the wine and prevent oxidation.
- 6
Dilution with Water
Add 100 ml of water to the mixture to balance the flavor and adjust the wine's alcohol content.
- 7
Aging
Transfer the wine to oak barrels for aging. Allow it to age for at least 6 months to develop complex flavors.
- 8
Bottling
After aging, filter the wine and transfer it to clean bottles, sealing them with corks.
- 9
Serving
Serve chilled in wine glasses and enjoy the aromatic flavors of Villa Antinori Castello Della Sala 'Cervaro'.
