    Clean the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any sand or debris. Remove the beards by pulling them off firmly.

    Cook the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Remove from the pan and drain on paper towels. Chop into bite-sized pieces.

    Prepare the Cheeses

    Grate the cheddar cheese and tear the mozzarella cheese into small pieces. Set aside.

    Combine Fillings

    In a large mixing bowl, combine the chopped bacon, cheddar cheese, maple aioli, and marinated bell peppers. Mix well.

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

Cooking

    Spoon the filling mixture into each cleaned mussel shell, ensuring they are generously filled.

    Place the stuffed mussels in a baking dish. Pour the Sunday sauce over the mussels, ensuring they are well-coated.
