Prepare the Grapes
Wash the Cortese grapes thoroughly under running water. Remove the stems and any damaged or spoiled grapes.

Crush the Grapes
In a large bowl, crush the grapes using your hands or a potato masher to release the juice. Ensure that the skins are broken to allow for fermentation.

Combine Ingredients
In a fermentation vessel, combine the crushed grapes, cooled sugar syrup, lemon juice, and yeast. Stir gently to mix well.

Fermentation Process
Cover the fermentation vessel with a clean cloth and secure it with a rubber band. Allow the mixture to ferment at room temperature for about 7-10 days, stirring daily.

Strain the Mixture
After fermentation, strain the mixture through a fine mesh strainer or cheesecloth into a clean container to separate the liquid from the solids.

Aging
Let the wine age for at least 3 months to develop its flavors. After aging, it can be enjoyed chilled or at room temperature.
