Harvesting the Grapes
Select ripe Aglianico grapes and harvest them. Ensure the grapes are free from rot and any foreign materials.

Crushing and Destemming
Place the harvested grapes into a crusher-destemmer to separate the stems from the berries. Crush the berries to release the juice.

Fermentation Preparation
Transfer the crushed grapes into a fermentation vessel. Add the yeast, sugar, and sulfites to the must (crushed grapes and juice).

Fermentation Process
Allow the mixture to ferment at a controlled temperature (18-25°C) for about 7-14 days. Stir the must daily to ensure even fermentation.

Pressing the Wine
After fermentation, press the must to separate the liquid (wine) from the solids (pomace). Use a wine press for this process.

Racking the Wine
Transfer the pressed wine into clean fermentation vessels, leaving sediment behind. This process is called racking.

Aging the Wine
Let the wine age in barrels or tanks for 6-12 months. Monitor the wine regularly to ensure proper development of flavor.

Bottling
Once aging is complete, bottle the wine in clean, sterilized bottles. Seal them with corks and label appropriately.
