    Cook the Linguine

    Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente, usually about 9-11 minutes.

    Prepare the Pepper

    While the pasta is cooking, in a large skillet over medium heat, add the cracked black pepper and toast it for about 2 minutes until fragrant. Be careful not to burn it.

    Combine Pasta and Pepper

    Once the linguine is cooked, reserve about 1 cup of the pasta cooking water and then drain the linguine. Add the drained linguine to the skillet with the toasted black pepper.

    Emulsify the Sauce

    Add the reserved pasta water gradually, about 1/4 cup at a time, tossing the linguine continuously until the sauce thickens and coats the pasta.

    Add Cheese

    Remove the skillet from heat and add the grated Parmigiano Reggiano cheese, tossing to combine. If the pasta seems dry, add a little more reserved pasta water.

    Finish and Serve

    Drizzle the olive oil over the pasta, season with additional salt if needed, and serve immediately with extra Parmesan on the side.
