    Prepare the Lentils

    In a saucepan, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pan.

    Add the chopped onion and minced garlic to the pan and sauté until translucent.

    Add the lentils and chicken broth, bring to a boil, then reduce heat and simmer for about 20-25 minutes until lentils are tender.

    Crumble the cooked bacon and stir it into the lentils. Season with salt and pepper to taste.

    Cook the Salmon

    While the lentils are cooking, preheat a skillet over medium-high heat and add olive oil.

    Spread a thin layer of Dijon mustard on the top of each salmon fillet.

    Place the fillets mustard-side down in the skillet and cook for about 4-5 minutes. Flip and cook for an additional 4-5 minutes or until the salmon is cooked through.

    Remove from heat and sprinkle with fresh parsley.
