1. Caramelize the Onions
In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring occasionally, for about 30-40 minutes until they are caramelized and golden brown.
2. Add Stock and Wine
Once the onions are caramelized, add the beef stock and white wine to the pot. Stir in the thyme, bay leaves, salt, and pepper. Bring to a simmer and let it cook for an additional 20 minutes.
3. Prepare the Croutons
While the soup is simmering, preheat your oven to 400°F (200°C). Place the slices of baguette on a baking sheet and toast them in the oven for about 5-7 minutes until crispy.

Remove the bay leaves from the soup. Ladle the soup into oven-safe bowls. Place a slice of toasted baguette on top of each bowl and generously sprinkle gruyère cheese over the bread.
5. Broil the Soup
Place the bowls on a baking sheet and broil in the oven for 3-5 minutes until the cheese is melted and bubbly.
