Preparing the Potatoes

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Wash and Cut Potatoes

    Wash the russet potatoes thoroughly and cut them into even-sized wedges or cubes, about 1 inch thick.

    Bake the Potatoes

    Place the cut potatoes in a large bowl. Drizzle with olive oil and sprinkle with salt. Toss to coat evenly. Spread the potatoes on a baking sheet in a single layer. Bake in the preheated oven for 25-30 minutes or until they are tender and starting to brown, flipping halfway through.

Frying and Seasoning

    Heat Oil for Frying

    In a large skillet or frying pan, heat about 1/2 inch of oil over medium-high heat until hot but not smoking.

    Fry the Potatoes

    Once the potatoes are baked and have cooled slightly, carefully add them to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-5 minutes or until they are golden brown and crispy.

    Drain and Toss

    Using a slotted spoon, remove the fried potatoes from the oil and place them on a paper towel-lined plate to drain excess oil. While still hot, toss the fried potatoes in a large bowl with the grated Parmesan cheese and Vinnie's seasoned salt until evenly coated.
