Preparation
1. Prepare the brisket
Rinse the corned beef brisket under cold water to remove excess salt. Pat it dry with paper towels.
2. Prepare the seasoning mix
In a small bowl, combine black peppercorns, mustard seeds, coriander seeds, allspice berries, and bay leaves. Crush lightly with a mortar and pestle or the bottom of a heavy pan.

3. Cook the corned beef
In a large pot, place the rinsed corned beef brisket and add water and beef broth. Add the quartered onion, minced garlic, and the prepared seasoning mix. Bring to a boil over medium-high heat.
4. Simmer the brisket
Once boiling, reduce the heat to low, cover, and let it simmer for about 2.5 to 3 hours, or until the meat is tender.
5. Add vegetables
After the brisket has simmered, add the chopped carrots, quartered potatoes, and cabbage wedges to the pot. Cover and cook for an additional 30-45 minutes, or until the vegetables are tender.
6. Serve
Remove the corned beef from the pot and let it rest for 10 minutes before slicing. Serve with the cooked vegetables, and enjoy!
