Prepare the Gyro Meat

Mix the Ingredients
In a large bowl, combine the ground lamb, ground beef, minced garlic, chopped onion, oregano, cumin, salt, and black pepper. Mix until well combined.

Shape the Meat
Form the meat mixture into a loaf shape and place it on a baking sheet lined with parchment paper.

Cook the Meat
Preheat your oven to 375°F (190°C). Drizzle the formed meatloaf with olive oil and bake for about 45 minutes, or until the internal temperature reaches 160°F (70°C).

Slice the Meat
Once cooked, allow the meat to rest for 10 minutes before slicing it thinly.
Prepare the Tzatziki Sauce

Combine the Ingredients
In a medium bowl, combine the Greek yogurt, grated cucumber, minced garlic, chopped dill, lemon juice, and salt. Mix well until smooth.

Cover the tzatziki sauce and refrigerate for at least 30 minutes to allow the flavors to meld.
Assemble the Gyro

Warm the pita bread in a dry skillet over medium heat for about 1-2 minutes on each side, or until heated through.

Layer the sliced gyro meat, sliced tomatoes, red onion, and shredded lettuce inside the warm pita.

Generously drizzle the tzatziki sauce over the filling.

Fold the pita around the filling and serve immediately with extra tzatziki on the side.
