Prepare Gyro Meat

Mix Meat Ingredients
In a large bowl, combine ground lamb, ground beef, minced garlic, chopped onion, dried oregano, ground cumin, salt, and black pepper. Mix well until all ingredients are fully incorporated.

Shape and Chill
Shape the meat mixture into a loaf or oval shape and place it in a baking dish. Cover with plastic wrap and refrigerate for at least 2 hours or overnight to firm up.

Cook the Meat
Preheat your oven to 375°F (190°C). Bake the meat loaf in the preheated oven for about 60 minutes, or until the internal temperature reaches 160°F (70°C). Let it rest for 10 minutes before slicing.

Slice the Meat
Once rested, use a sharp knife to slice the meat thinly.
Prepare Tzatziki Sauce

Chill
Cover the tzatziki sauce and refrigerate for at least 30 minutes to allow flavors to meld.
Assemble Gyros

Warm Pita Bread
Warm the pita bread in a dry skillet over medium heat for about 1-2 minutes on each side or until pliable.

Fill and Serve
On each pita, layer sliced gyro meat, sliced tomatoes, and sliced onions. Top with a generous dollop of tzatziki sauce. Fold the pita over and serve warm.
