Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs and olive oil. Mix until a rough dough forms.

    Knead the Dough

    Turn the dough onto a lightly floured surface and knead for about 5-7 minutes, until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Filling Preparation

    Mix the Filling

    In a bowl, combine the ricotta, mozzarella, parmesan, chopped basil, minced garlic, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Assembly

    Roll Out the Dough

    After resting, divide the dough into quarters. Roll out one quarter on a floured surface until thin (about 1/8 inch thick).

    Cut and Fill

    Using a round cutter or glass, cut circles from the rolled dough. Place about 1 tablespoon of filling in the center of half the circles. Moisten the edges with water and top with remaining circles. Press the edges to seal.

Breading and Frying

    Prepare for Frying

    Set up a breading station with one bowl for beaten eggs and another for breadcrumbs. Dip each ravioli in the egg, then coat with breadcrumbs.

    Fry the Ravioli

    In a large pot, heat oil over medium-high heat. Fry ravioli in batches for 3-4 minutes, or until golden brown. Remove and drain on paper towels.

Serving

    Serve the Ravioli

    Serve the toasted ravioli warm, garnished with grated parmesan cheese and alongside marinara sauce for dipping.
