Prepare the Filling

Sauté the Spinach
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.

Add Spinach and Seasonings
Add the fresh spinach to the skillet and cook until wilted, about 3 minutes. Stir in the crumbled feta cheese, black pepper, salt, and lemon juice. Mix well and remove from heat. Let the mixture cool.
Make the Pita Dough

Activate the Yeast
In a small bowl, combine warm water, sugar, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix the Dough
In a large mixing bowl, combine flour and salt. Create a well in the center and pour in the yeast mixture and 1 tablespoon of olive oil. Stir until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until it doubles in size.

Once the dough has risen, punch it down and divide it into 6 equal pieces. Roll each piece into a circle about 6 inches in diameter.
