Activate the Yeast
In a small bowl, combine the warm water and sugar. Sprinkle the active dry yeast over the top and let it sit for about 5-10 minutes until it becomes frothy.

Mix the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the frothy yeast mixture along with the olive oil. Stir until a dough begins to form.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until it is smooth and elastic. If the dough is too sticky, add a little more flour as needed.

First Rise
Place the kneaded dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Shape the Pitas
Once risen, punch down the dough and divide it into 8 equal pieces. Shape each piece into a ball and then flatten it into a disk about 1/4 inch thick.

Cover the disks with a damp cloth and let them rest for about 30 minutes to allow them to puff up slightly.

While the pitas are resting, preheat your oven to 475°F (245°C) and place a baking stone or an inverted baking sheet inside to heat up.

Carefully place the dough disks onto the hot baking stone or sheet and bake for 5-7 minutes, or until they puff up and are lightly golden.
