Thinly slice the Italian beef, mushrooms, onion, and bell peppers. Mince the garlic cloves.
Cooking the Filling

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions, bell peppers, and mushrooms. Sauté until the vegetables are soft, about 5-7 minutes.

Add the sliced Italian beef to the skillet and cook until heated through, stirring occasionally, about 3-4 minutes.
Making Cheese Sauce

Add Milk
Gradually whisk in the milk, ensuring there are no lumps. Continue cooking until the mixture thickens, about 3-5 minutes.

Stir in the shredded cheddar cheese and softened cream cheese until melted and smooth. Season with salt and black pepper to taste.
Assembling the Sandwiches

Prepare Hoagie Rolls
Slice the Asiago hoagie rolls lengthwise, but do not cut all the way through.

Spoon the beef and vegetable mixture into each hoagie roll.
