Cooking Pasta

Boil the Water
In a large pot, bring 2 liters of water to a rolling boil over high heat.

Add Salt
Once the water is boiling, add 1 tsp of salt to the water to enhance the flavor.

Cook Spaghetti
Add 200g of spaghetti to the boiling water. Cook according to package instructions, typically around 8-10 minutes, until al dente.

Drain Pasta
Once cooked, drain the spaghetti in a colander and set aside, reserving a little pasta water if desired.
Making Marinara Sauce

Heat Olive Oil
In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Sauté Onion and Garlic
Add 1 chopped medium onion and 3 minced garlic cloves to the skillet. Sauté for about 3-4 minutes until the onion becomes translucent.

Add Tomatoes and Seasoning
Stir in 400g of canned crushed tomatoes, 1 tsp of dried oregano, 1 tsp of dried basil, 1 tsp of salt, 1 tsp of black pepper, and 1 tsp of sugar. Mix well.

Simmer the Sauce
Reduce the heat to low and let the sauce simmer for about 15-20 minutes, stirring occasionally, until it thickens.

Combine Pasta and Sauce
Add the drained spaghetti to the skillet with the marinara sauce. Toss to combine, adding a little reserved pasta water if needed to loosen the sauce.

Serve the pasta hot, garnished with fresh basil leaves, if desired.
