Beef Preparation

Cook the Beef
In a large skillet or slow cooker, add the thinly sliced beef and cook on medium-high heat until browned, about 5-7 minutes. If using a slow cooker, add the beef and cover to cook on low for 6-8 hours.

Prepare Peppers and Onions
While the beef is cooking, slice the green bell pepper and onion into thin strips. Set aside.
Au Jus Preparation

Make the Au Jus
In a separate pot, combine the beef broth, soy sauce, garlic powder, onion powder, and black pepper. Bring to a simmer and let cook for 10 minutes to blend the flavors.

Assemble the Sandwiches
Once the beef is cooked and tender, remove it from the skillet or slow cooker. In the same skillet, add olive oil and sauté the sliced peppers and onions until soft, about 3-5 minutes.

Final Assembly
Slice the crusty rolls in half. Layer the beef, sautéed peppers, onions, provolone cheese, and giardiniera on the bottom half of the rolls. Place the top half of the roll on and serve with a side of au jus for dipping.
