Method

Preparation

  1. 1

    Prepare the Chili Peppers

Wash the fresh red chili peppers thoroughly under cold water. Remove the stems and slice them in half lengthwise. If you prefer a milder sauce, you can remove the seeds.

  2. 2

    Prepare the Garlic

Peel the garlic cloves and chop them finely. This will enhance their flavor during cooking.

  3. 3

    Prepare Optional Ingredients

If using, finely chop the onion and measure out the lime juice and paprika.

Cooking

  1. 4

    Combine Ingredients

In a medium saucepan, combine the prepared chili peppers, chopped garlic, vinegar, salt, and sugar. If using, also add the chopped onion, lime juice, and paprika.

  2. 5

    Simmer the Mixture

Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low and let it simmer for about 15-20 minutes, stirring occasionally.

  3. 6

    Blend the Sauce

After simmering, remove the saucepan from heat and let it cool slightly. Transfer the mixture to a blender and blend until smooth. If the sauce is too thick, you can add more vinegar or water to reach your desired consistency.

  4. 7

    Strain (Optional)

For a smoother sauce, strain the blended mixture through a fine-mesh sieve into a clean bottle or jar, pressing down to extract as much liquid as possible.

  5. 8

    Store the Sauce

Pour the hot sauce into a clean glass bottle or jar. Allow it to cool completely before sealing. Store in the refrigerator for up to 3 months.
