Prepare the Meat

Mix the Meat
In a large bowl, combine the ground beef, ground lamb, minced garlic, chopped onion, ground cumin, ground coriander, dried oregano, salt, black pepper, and olive oil. Mix until well combined.

Cook the Meat
Heat a skillet over medium heat. Add the meat mixture and cook until browned and cooked through, about 8-10 minutes, breaking it apart with a spatula as it cooks.
Make Tzatziki Sauce

Combine Ingredients
In a medium bowl, combine Greek yogurt, grated cucumber (make sure to drain excess water), minced garlic, chopped fresh dill, lemon juice, and salt. Mix well.

Chill the Sauce
Cover the tzatziki sauce and refrigerate for at least 30 minutes to allow the flavors to meld.
Prepare Vegetables

Prepare Greens
Wash and dry the leafy greens (lettuce or spinach) and set aside.
Assemble the Gyros

Warm Pita Bread
Lightly warm the pita bread in a dry skillet or microwave for a few seconds to make them pliable.

Fill the Pitas
Spread a generous amount of tzatziki sauce on each pita. Add a portion of the cooked meat on top, followed by slices of tomato, red onion, cucumber, and a handful of leafy greens.

Serve
Wrap the pita around the filling and serve immediately with extra tzatziki on the side.
