In a large pot, combine the white vinegar, water, olive oil, sugar, salt, dried oregano, crushed red pepper flakes, black peppercorns, and bay leaves. Bring the mixture to a boil over medium heat, stirring until the sugar and salt are dissolved.

Once the brine is boiling, add the prepared vegetables and garlic. Stir to ensure all vegetables are submerged in the brine.
