    Wash and peel the russet potatoes. Using a mandoline slicer, slice the potatoes very thinly, about 1/16 inch thick.

    Soak the Potato Slices

    Place the sliced potatoes in a large bowl of cold water to soak for at least 30 minutes. This helps to remove excess starch.

    Dry the Potato Slices

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

    Heat the Oil

    In a large, deep skillet or heavy pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potato Chips

    Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pan. Fry until golden brown, about 3-4 minutes, flipping halfway through.
