    In a mixing bowl, combine the chopped walnuts, chopped pistachios, granulated sugar, and ground cinnamon. Mix well until all ingredients are evenly incorporated.

    In a small saucepan, melt the unsalted butter over low heat. Allow it to cool slightly before using.

Dough Preparation

    Prepare Phyllo Dough

    Unroll the phyllo dough and cover it with a damp kitchen towel to prevent it from drying out. Preheat your oven to 350°F (175°C).

    Take one sheet of phyllo dough and brush it lightly with melted butter. Layer another sheet on top and repeat this process until you have 5-6 layers.

    Spread a portion of the filling mixture evenly over the top layer of phyllo dough.

    Starting from one end, carefully roll the phyllo dough into a tight log, ensuring that the filling stays inside.

    Slice the rolled dough into 1-inch pieces and place them on a greased baking sheet.

    In a small saucepan, combine water, granulated sugar, honey, and vanilla extract. Bring to a boil, then reduce the heat and let it simmer for 10 minutes.

    Remove the baklava pinwheels from the oven and immediately drizzle the warm syrup over the hot pinwheels. Let them sit for at least 30 minutes before serving to allow the syrup to soak in.
