Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 375°F (190°C).

  2. 2

    Prepare Chicken

Rinse the chicken breasts under cold water and pat them dry with paper towels.

  3. 3

    Make Marinade

In a small bowl, combine the olive oil, Dijon mustard, honey, garlic powder, black pepper, paprika, and salt. Mix well until fully combined.

  4. 4

    Marinate Chicken

Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring they are well coated. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes (or up to overnight for more flavor).

Baking

  1. 5

    Prepare Pastrami

Once the chicken is marinated, take it out of the refrigerator. Lay the pastrami slices over each chicken breast, fully covering them.

  2. 6

    Bake Chicken

Place the chicken breasts in a baking dish and bake in the preheated oven for 25-30 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F or 75°C).

Finishing Touches

  1. 7

    Add Cheese

In the last 5 minutes of baking, remove the chicken from the oven and sprinkle the shredded cheese on top of the pastrami. Return to the oven until the cheese is melted and bubbly.

  2. 8

    Serve

Remove the chicken from the oven, let it rest for a few minutes, then garnish with fresh parsley before serving.
